Indian cuisine is incredibly diverse! During my stay in South India, I had the chance to try thalis, vegetarian meals served in South India on a banana leaf. What sets South India apart is that rice is used more frequently. Side dishes include dhal, sambar (a spicy, tangy lentil broth with vegetables), sautéed vegetables, pickles (made with mango or lemon), raita (yogurt with onions, for example), coconut chutney, and a type of bread I discovered and particularly enjoyed: parotta (a flaky flatbread made with white flour that’s very popular in Kerala and Tamil Nadu).
